Irish whiskey has its origins in the early medieval period, with monks in Ireland believed to have begun distilling spirits as early as the 12th century. It quickly became a popular drink, known for its smoothness and triple distillation process, which sets it apart from other whiskeys.

The craft of distilling also gave rise to poitín, a traditional Irish spirit made from malted barley, potatoes, or other grains, often distilled illicitly in remote areas. Poitín, known for its potency, is considered a precursor to modern Irish whiskey and holds a significant place in Ireland’s distilling history
